Answer: The sink must be cleaned. The code requires the sink to be cleaned before using it to thaw food.

4. What is the required standard for the cleanliness of equipment food-contact surfaces and utensils?

7. Which of the following items is permitted to be immersed directly in ice or water according to the storage guidelines?
